Sensory pleasures

Pau : The Béarn Up Close

"The Pyrenees, the area around Pau, and Jurançon's vineyards, are all a perpetual source of inspiration," according to Christophe Canati, Chef at the "Jeu de Paume," Hotel Parc Beaumont's gourmet restaurant. But don't be satisfied with your love of the Béarn: world travelers scour the planet seeking new taste sensations and neglected aromas. On the menu: a creative, exotically inspirated, perpetually innovative, cuisine, in his quest to broaden tastes and astound the palate. "My watchword is simple," states Christophe Canati, "let the product take the lead."

A perfectionist, Christophe Canati keeps an eye on everything, down to the slightest detail, and in particular, the restaurant's decor, an indispensable backdrop, according to Canati, to the dishes on his menu. When he first arrived at the "Jeu de Paume," he insisted on creating a refined contemporary atmosphere, bathed in light. The results matched his expectations: the restaurant's dining room, overlooking an immense, tree-covered, park, can't help but make you want to be footloose and fancy free. In August, everything draws you outside: the Hotel Parc Beaumont offers a rate plan with room overlooking the grounds, 18-hole golf course, and free access to the Wellness Center. You don't need to choose between sports and fine dining.

Christophe Canati recommends:
- Escalope of Foie Gras on homemade Melon Preserves, Mint Pesto and Fried Ginger
- Aromatic Court-bouillon Saint Pierre, with Green Peas and Tomato Preserves, Shrimp Broth à la Cumbawa
-Variation on Wild Marra Strawberries, Almond Milk Sorbet
